NCBS COASTAL BBQ BOOT CAMP & JUDGING CLASS

Our 3rd 2010 NCBS BBQ Boot Camp& Judging Class will be held October 1&2, 2010 at the Events Center in Halyburton Park, Wilmington, NC. See www.halyburtonpark.com for more about this 58-acre Nature Preserve in the heart of Wilmington. The Park is located at 4099 S. 17th St. and is only a few miles from the river front shops and a short trip to the beaches.


NCBS has already secured the services of three of North Carolina’s premier Pit Masters plus Chef(s) to instruct our classes. We will teach the campers to cook whole hogs eastern NC style, shoulders and Boston butts western NC style, chicken, pork ribs, beef brisket, whole beef tenderloins, beef prime rib and whole wild salmon. Campers will also be instructed how to make eastern NC vinegar based sauce and Lexington style BBQ dip and rubs along with side dishes such as collards, baked beans, banana pudding etc.


Jim Early will teach the class how to make some of the nationally acclaimed dishes from his published and soon to be published cook books including the Pimento Cheese featured in Southern Living.

There will be judging classes intertwined with the cooking classes. Attendees will first be taught how to cook and then taught how to judge. All attendees will exit camp as NCBS Certified BBQ Judges.

There will also be a mini class on Quality of Life-12 Steps to Balance provided by Jim Early who has taught classes and produced seminars on this subject for lawyers, doctors and businessmen and women across the country for the past 20 years. The camp will start on Friday about 5-6 p.m. with a cookout and mixer so the campers may meet each other and spend 4-5 hours with the Pit Masters/Chefs and share their cooking concerns and some items they would like the Pit Masters/Chefs to address in the classes Saturday. Those brave souls that would like to sit up and talk with the Pit Masters all (or any part) of Friday night while the Pit Masters attend to the prep and start of the whole hog part of the event may do so (they enjoy your company). Hog(s) will generally be prepped about midnight and fired about 3 a.m. Most campers will choose to sleep and check on the pig(s) at breakfast which will take place at 7:30 a.m. Saturday morning. Classes start at 8 a.m. and run to 3 p.m. Campers will have a break to shower etc. and return to camp at 5 p.m. to help with the buffet and assist the Pit Masters/Chefs in serving our guests, sponsors, celebrities and themselves. Campers will dine with our guests, sponsors, celebrities and fellow campers. THE Party will start about 6 p.m. and end at 9 p.m.

Each camper will get a diploma signed by NCBS officers/Pit Masters/Chefs. In addition, each camper will receive a well made hat, shirt and apron with NCBS logo and BBQ Boot Camp insignia. Campers usually sign each others hats and aprons and the Pit Masters and Chefs (if asked) will sign as well.


Camp cost is $395 p/p for male/female adults (limit 30 adults) and includes the cook-out and mixer Friday night, breakfast, lunch and THE Party Saturday night, time with the Pit Masters and classes on Saturday plus hat/shirt/apron. Spouse or guest may attend THE Party with a camper for an additional $25 fee. Camp cost for male/female teens ages 15-18 (limit 10 teens) is $30. Teens may attend camp Saturday 7:30 a.m. to 3 p.m. There is NO alcohol present while teens are in camp. Adult campers must sign a standard NCBS liability release and teens must sign and have parents sign a parent/guardian standard NCBS liability release to attend camp.
