THE NCBS PIEDMONT BBQ BOOT CAMP
Our next NCBS BBQ Boot Camp will be held May 14-15, 2010 at Tangle wood Park, Clemmons, N. C. See www.co.forsyth.nc.us/Tanglewood for more about this little piece of heaven on earth. In addition to a championship golf course, the park boast a par three course, swimming, horse-back riding along the river, tennis, hiking, BMX course and lovely lakes and wildlife. And the Manor House is an ideal place to kick back and enjoy the good life.
NCBS has already secured the services of three of North Carolina’s premier Pit Masters to instruct our classes. We will teach the campers to cook whole hogs eastern N. C. style, shoulders and Boston butts western N. C. style, chicken, pork ribs, beef brisket, whole beef tenderloins, beef prime rib and whole wild salmon. Campers will also be instructed how to make eastern N. C. vinegar based sauce and Lexington style BBQ dip and rubs along with side dishes such as collards, baked beans etc.
Jim Early will teach the class how to make some of the nationally acclaimed dishes from his books The Best Tar Heel Barbecue Manteo to Murphy and Reflections: The Memories and Recipes of a Southern Cook including the Pimento Cheese featured in Southern Living.
The camp will start on Friday about 5-6PM with a cookout and mixer so the campers may meet each other and spend 4-5 hours with the Pit Masters and share their cooking concerns and some items they would like the Pit Masters to address in the classes Saturday. Those brave souls that would like to sit up and talk with the Pit Masters all (or any part) of Friday night while the Pit Masters attend to the prep and start of the whole hog part of the event may do so (they enjoy your company). Hog(s) will generally be prepped about midnight and fired about 3AM. Most campers will choose to sleep and check on the pig(s) at breakfast which will take place at 7:30AM Saturday morning. Classes start at 8AM and run to 3PM. Campers will have a break to shower etc and return to camp at 5: PM to help with the buffet and assist the Pit Masters in serving our guests, sponsors, celebrities and themselves. Campers will dine with our guests, sponsors, celebrities and fellow campers. THE Party will start about 6PM-and end 10-11PM.
We have a block of rooms at Village Inn Golf & Conference Center (www.thevillageinn.com) for $58+tax per room per night (single or double) and Tanglewood has the Manor House and a new RV Park. Campers can review a list of area motels (Google lodging in Clemmons N. C. area) and accommodations at Tanglewood and make their own lodging arrangements. Lodging is not included in the camping fee.
Each camper will get a diploma signed by NCBS officers and the Pit Masters. In addition, each camper will receive a well made hat, shirt and apron with the NCBS logo and BBQ Boot Camp insignia. Campers usually sign each others hats and aprons and the Pit Masters and celebrities (if asked) will sign as well.
Camp cost is $300 p/p for male/ female adults (limit 30) and includes the cook-out and mixer Friday night, breakfast, lunch and THE Party Saturday and time with the Pit Masters and classes on Saturday plus hat, shirt and apron. Camp cost for male/female teens ages 16-18 (limit 10) is $30. Teens may attend camp Saturday 7:30 AM to 3PM. There is NO alcohol present while teens are in camp. Adult campers must sign a standard NCBS liability release and teens must sign and have parents sign a parent /guardian standard NCBS liability release to attend camp.
